Production standard in brief

Our summary of the standard set by the National Tax Agency. See the agency's page for the official text.

Japan Wine made only from specified varieties grown in Hokkaido (including wild-grape types and hybrids), with minimum sugar levels. As a rule no water or alcohol may be added, but wine fermented in the container it is shipped in may have brandy added to that container after fermentation. Acid addition is strictly limited, reflecting the assumption that grapes from this cool region retain their acidity.
