Production standard in brief

Our summary of the standard set by the National Tax Agency. See the agency's page for the official text.

Wine: Japan Wine made only from specified grape varieties grown in Yamanashi Prefecture, with minimum sugar levels (e.g., 14% for Koshu and 18% for European varieties). As a rule no water or alcohol may be added, but wine fermented in the container it is shipped in may have brandy added to that container after fermentation. Sake: made with Japanese rice (grade 3 or higher) and water from designated water systems in the prefecture (such as the Southern Alps, Yatsugatake and the northern foothills of Mt. Fuji). Added brewing alcohol is limited to 10% of the rice weight.
