Production standard in brief

Our summary of the standard set by the National Tax Agency. See the agency's page for the official text.

Only Miyama Nishiki, Hitogokochi, Kinmon Nishiki and Sankei Nishiki rice harvested from specified paddies in Omachi City and Matsukawa Village may be used. All rice is steamed in a koshiki steamer, and koji is made in small batches in koji rooms within the area. Added brewing alcohol is limited to 10% of the rice weight. The system has two tiers: sake must be certified as GI Nagano (sake) and then certified as Shinano Omachi.
